Hibachi catering in Rosemary Beach

Rosemary Beach is our busiest bachelorette town on 30A and our tightest working space. The West Indies architecture that makes the place look like a film set — houses pushed to the lot line, cobbled lanes, carriage houses over the garages, courtyards behind gates — leaves very little flat, open ground. So we have learned the town block by block. Courtyards off the east–west lanes are usually workable. Carriage-house drives are often the single best surface on the property. Barrett Square-adjacent rentals are the hardest, because the pad is shared. None of that is a problem if we know before the night, which is why our Rosemary bookings ask for a courtyard photo. What we get in return is the best-looking dinner we cook anywhere: a lantern-lit courtyard, twelve people at one long table, and no walk home.

Where we set up in Rosemary Beach

We need six by four feet of level ground with open sky and three feet of chef clearance. In Rosemary Beach that is the rear or side courtyard, the carriage-house parking pad, or occasionally the pool surround. Brick and shell courtyard surfaces are ideal. We cannot work under a second-floor overhang, on a balcony, or in a garage. Where a courtyard is fully enclosed by walls on four sides with a low pergola, we move to the drive. We bring heat mats for any wood decking and we sweep and wipe down before we leave — Rosemary courtyards are the kind of surface people notice.

Getting to you

Access is off 30A onto the cobblestone lanes, and those lanes are slow, narrow and shared with pedestrians and golf carts all evening. We arrive 45 minutes before your seating and we need one held space on the drive or pad for the unload. Several Rosemary rentals only have street parking, which in July fills by four in the afternoon — if that is your situation, tell us in the booking and we will plan an earlier unload. Gate codes for courtyard gates should come with your confirmation, not at 6:45.

Bachelorette and birthday parties in Rosemary Beach

If you searched for a Rosemary Beach bachelorette dinner and found a wall of two-hour waits, this is why we exist. Groups of ten to fourteen book a house on a cobblestone lane, and Friday night becomes the problem nobody solved: no restaurant will seat the whole party at eight, the group does not want to split, and nobody wants to drive. A courtyard hibachi dinner takes the whole thing off the table. We cook at the group, not for them — the knife work, the volcano, the shrimp toss all happen three feet away — and the courtyard lighting means the photos come out without anyone trying. Birthday dinners here follow the same shape, usually a milestone one with a house rented for the occasion.
