Fort Walton Beach sits west of Destin across the bay, and it is the part of this coast where people actually live. The rentals here are houses rather than towers: older neighbourhoods off Eglin Parkway, mid-century blocks near the sound, and newer builds closer to the water, most of them with a yard, a driveway and a back patio. That matters more than it sounds. A house with its own outdoor space is the easiest kind of booking we take, because nothing has to be arranged with an association or reserved from a resort. The island and the Gulfarium are a few minutes east over Brooks Bridge, so groups often stay here and spend their days there. For dinner it means the party comes back to a private yard rather than queueing on Okaloosa Island at seven.

Where we set up in Fort Walton Beach

We cook outdoors on our own flat-top and need roughly 6 ft x 4 ft of level ground with open sky above it, plus about 3 feet of clear standing room on the chef's side. In Fort Walton Beach that is usually the back patio or the driveway, both of which most houses here have. Older properties sometimes carry a screened enclosure over the pool, and that is the one thing that rules a spot out: the screen sits directly overhead and traps heat and smoke, so we move to the drive instead. Wooden decks are fine. Heat mats go down under the grill as standard, with a drop cloth around it, and the surface is left as we found it.

Getting to you

Fort Walton Beach is reached on Highway 98 from the east over Brooks Bridge and from the north on Eglin Parkway, and the bridge is the part that backs up in season. The chef plans around it and aims to be on site about 45 minutes before your seating. Parking is rarely difficult here, which is one of the advantages of a residential town, but we ask you to keep a driveway space clear rather than leave the equipment cart on the street.
