Okaloosa Island is a barrier-island strip between Fort Walton Beach and Destin, and it is almost entirely rental. Mid-rise and high-rise condo buildings run along Santa Rosa Boulevard, a handful of lower complexes and beach houses sit behind them, and the Boardwalk, the Okaloosa Island Pier and the Gulfarium fill the middle. That mix decides how a hibachi dinner works here more than anything else does. A house on 30A comes with its own driveway and its own rules. A condo on Okaloosa Island comes with an association, a shared pool deck, and a building manager who needs to know we are coming. None of that stops the evening, and most of it is settled with one email. It does mean the first question we ask about a booking here is which building you are in, because that answer decides where we cook, and it is far easier to sort two weeks out than on the afternoon itself.

Where we set up in Okaloosa Island

We cook outdoors on our own flat-top and need roughly 6 ft x 4 ft of level ground with open sky above it, plus about 3 feet of clear standing room on the chef's side. On Okaloosa Island that is rarely a balcony. Associations generally prohibit open flame on balconies, and above the second floor the wind off the gulf usually settles the question anyway. What does work is a ground-level pool deck or courtyard, a reserved section of the parking deck, or the patio of a beach house on the streets behind the boulevard. Getting to you

Okaloosa Island is reached over the Brooks Bridge from Fort Walton Beach and from the east along Highway 98, and in season both slow down badly in the late afternoon. We plan our own arrival around that rather than asking you to: the chef aims to be on site about 45 minutes before your seating. Parking is the one thing we ask you to hold, ideally a space near the service entrance or the pool gate kept clear, rather than one we circle the building for. Okaloosa Island sits outside the zone where we charge no travel fee, so travel is calculated on the booking form against your exact address and shown before you commit, never added afterwards.

Bachelorette and birthday parties in Okaloosa Island

This island suits two shapes of booking in particular. The first is a bachelorette group in a two or three bedroom condo, where the restaurant version of Friday means moving twelve people back over the Brooks Bridge at seven and again at ten. The second is a birthday where half the party is children and the pool is the entertainment until the food arrives. Hibachi answers both the same way: the cooking happens where everyone already is, and it is the entertainment rather than an interruption to it. The other half of the argument is the kitchen. A rental condo kitchen is usually too small to host anything at all, and we do not use it, because we cook entirely outside on our own equipment. Rates are the same here as everywhere else we work: $60 per adult on the 2-protein plate, $30 per child aged 5 to 12, and above 18 guests in one seating a second chef and a second station at no extra charge.
